Acetaldehyde in Yogurt, Beer and Water

The same 15 parts per million that define one product will get another one written up as a defect.

Yogurt’s entire identity rides on one small molecule. The same molecule is beer’s most infamous defect and bottled water’s oldest complaint. Identical structure, identical measurement, three different verdicts.

Acetaldehyde is a two-carbon aldehyde, boiling at 20 C, below room temperature. It never waits its turn in a matrix. It announces itself first.

In yogurt it is the character impact compound. 14 to 20 ppm reads as fresh and properly cultured. Below 8 ppm the flavor falls flat.

In lager the same range is the green apple defect. Style thresholds run 5 to 15 ppm, and trained panels flag pale lagers as low as 1 to 5 ppm.

In bottled water the threshold collapses to 10 to 25 micrograms per liter, a thousand times lower. PET can shed enough during storage to cross it, which is why resin makers dose scavengers into the bottle wall.

The molecule never changed. The matrix rewrote the verdict.

Brewers will object that it is really a process marker, green beer pulled off the yeast too early. True, and it changes nothing at the panel table: the score sheet says green apple, not immature.
